Caramel Apple Pie Moonshine


I am known for having random thoughts on a daily basis. I was talking to my sister one Saturday night, bored out of my mind and a thought popped into my head, "I want to make moonshine" I said "Huh? why" she asked, "I don't know I just want to. I think I'll make apple pie moonshine." So I hopped out of bed and went to the grocery because I had absolutely nothing to make moonshine at home. I just knew it needed to have EverClear. So of course while at the store just moseying around I decided that google might help in this situation. I google 'Apple Pie Moonshine' and since I already made the effort to get out of bed and head to the store I definitely wanted to find the easiest recipe I could find.

I went over it and saw that the ingredients list was short, which is what I like when it comes to an impromptu cooking session. So as per the list I picked up some apple cider, some apple juice,and cinnamon sticks. As I was about to leave the baking isle I passed by some baking caramels, and in my homer voice I though "mmm caramels" and threw a package of them in my cart. Now that's a good story to tell at parties.

The best part is that while this lovely concoction is cooking, your house smells like an apple pie without the mess of making apple pie! I think that's an awesome trade off. I poured the apple cider, apple juice, and spices into a very deep pot (it is a lot of liquid), minus the EverClear. I thought to myself, maybe I should measure out the caramels. I took out my measuring cups like a good chef would and measured out 1 cup of caramels and added them in. I stirred until they dissolved, and I patted myself on the back and walked away. But something bothered me, what if it wasn't caramel-y enough? So I went back to the pot, added in another cup, stirred once again and smiled.

And without even thinking I just took the bag of baking caramels and dumped the whole thing in there! it was like my hand had a mind of its own (it didn't I just really love caramels and wanted to use the whole bag).

I let it simmer for two hours, and strained it with cheese cloth over a very big bowl (this was a hard process, I had to do it a few times, but still some spices found their way into the bowl).

Last step is the EverClear, just taking a whiff of it made my nose feel all prickly. The recipe calls for the whole bottle, believe me use the whole bottle, the sweetness of the reduced liquid will hide any and all of the horrible flavor from the EverClear. Stir well to incorporate, and pour into whatever container you'd like. I chose to use big mason jars because I just love how country it feels.

This moonshine is addicting, sweet, smooth, and just what you need for a relaxing evening under the stars. Try it out and let me know what your tweaks are!

Caramel Apple Pie Moonshine
Ingredients
  1. 1 - 64 oz bottle apple juice
  2. 1 - 64 oz bottle apple cider
  3. 3 cups granulated sugar
  4. 8 cinnamon sticks
  5. 1/2 teaspoon ground nutmeg
  6. 1/2 teaspoon ground cinnamon
  7. 1 - 750 ml bottle EverClear
  8. 1 package baking caramels
Instructions
  1. Bring the apple juices, sugar, and spices to a boil. Cover and let simmer for 1 hour. 
  2. After one hour, remove from heat and let cool to room temperature. 
  3. Pour into a separate bowl with a strainer and cheesecloth. 
  4. Stir in the EverClear and ladle into individual jars.

Tip: You can wait till the moonshine has cooled down and everything settles to the top and just scoop out the spices that way.

Simply Tweaked Haitian Stew (Soup Joumou)

Pretty much every year I look forward to having this stew. Why you ask? Well every year on January first my mother makes this. It is a traditional meal to celebrate Haitian independence day. But, there are times I cannot wait a whole year for this yummy stew, like now...so I made it. Coconut, Dill, and Cannellini Rice

This is a little tweak from my coconut and black bean rice, just as good, and just as simple. The only tweaks I made was to add about 3 tablespoons of dill, a can of cannellini beans, and nixed the nutmeg. The coconut milk really rounds out this dish and gives it a depth straight from the Caribbean. The dill gives it a light buttery  herby note while the cannellini beans give it a nice creamy finish. Simply Tweaked Beef Stroganoff

The original recipe called for the use of a pressure cooker, yet one more handy dandy thing I do not have in my repertoire of kitchen gadgets. So for this I used my regular slow cooker, just for the first bit. I used dried shitaki mushrooms instead of porcini (I couldn't find them in my local grocery store). While I had those steep in some hot water, I started browning my short ribs, which I cut in half. I set them aside to rest and in the same oil I added in my onions and mushrooms and cooked until they became golden. I added the remainder of the ingredients and let simmer for a few minutes.  I then transferred the meat and veggies to my slow cooker and let it cook away on low for 4 hours.
